PinThe net connection is still playing hide and seek with me. It works only for 3-4 hours a day so somehow managing time to post here within that time. Hopefully the issue should be resolved sooner.

When I was googling for mango froyo recipes, I accidentally saw this granita. So since a year it was lying in my bookmark folder and finally made it this summer.

Granita involves no major cooking …only the waiting time is more. This is a healthy and very lite dessert perfect for summers. With constant irregular power cuts making granita was a nightmare and clicking it in the hot sun was also challenging.

    Ingredients

    • 2 and 1/2 cups watermelon
    • 1 tbsp lemon juice
    • 3 tbsp sugar

    Instructions

    • Cut the watermelon into halves and quarters. Then cut take out the flesh part alone. Chop into cubes and add it to the mixer with sugar and lemon juice.
    • Blend it together to form a puree(Dont add water). Pour the puree into a freezer safe bowl (such that it forms 1 inch layer)and freeze it for 1 hour at least or till the crystals start forming. If the layer is more, the time for crystallisation will be more.
    • Break dwn the crystals and return it to the freezer and freeze it for 3-4 hours till the whole puree turns frozen. Now scrap it gently with a fork or spoon. Serve immediately.
    • Just scrap it few minutes before serving and Serve Watermelon Granita in individual glasses.

    Notes

    • I found scrapping with fork easier. Use spoon or fork as per your convenience.
    • You can even try this with musk melon , lemon or even strawberry.
    • Watermelon by itself has good water content in it so no need to add water.
    • You can even freeze it overnight if you have the patience.

While scrapping with fork it gives a more beautiful texture where the crystls are more finer. Either ways the granita is tasty and with no doubt will empty in minutes.

I think folks in your place are very well behaved. I cant imagine letting something this delicious sit in the freezer 🙂 Beautiful clicks. Can totally understand the pain of powercuts, clicking in it and all that control.

@Nags : No it was not sour…the sweetness in watermelon and sugar compensates 🙂
