    First time I made this cake last year and packed it for our trip and we loved it. So made it again weeks back to pack it for my best friends family. The cake is so soft and the eggy flavour is not much dominated here, doesnt that sound interesting?!

    NOTE : If you dont have butterscotch chips, then skip it and proceed with just walnuts. But add 1 cup of sugar, I added only 3/4 cup because I added butterscotch chips.

    Loaf Cake

    Loaf Cake is a wonderful spongy cake made by baking a blend of flour butter, eggs and sugar. Loaf Cake Recipe is easy to make and could be done on any day to make the day special. Loaf Cake Recipe is presented in this post with step by step pictures.

    Ingredients

    • 1 cup maida | flour ~135 gms
    • 3/4 cup granulated sugar ~165 gms
    • 2 tbsp butter
    • 1 tsp baking powder
    • 1/2 cup hot milk ~125 ml
    • 2 eggs
    • 1/4 cup walnuts chopped
    • 1/4 cup butterscotch chips
    • 1 tsp vanilla essence
    • 1 tsp honey
    • 1/4 tsp salt

    NOTE : If you dont have butterscotch chips, then skip it and proceed with just walnuts. But add 1 cup of sugar, I added only 3/4 cup because I added butterscotch chips.

      Instructions

      • Sieve together maida, salt and baking powder, set aside. Beat eggs until fluffy , transfer to a mixing bowl and set aside.
      • Add sugar, then vanilla essence and honey to beaten eggs, mix well until sugar completely dissolves.
      • Add butter to milk and heat it until butter melts, wait till it cools down.
      • Then add it to the egg sugar mixture.
      • Then add maida in portions and mix well till a creamy batter is formed without any lumps.
      • Finally fold in walnuts and butterscotch.
      • Preheat oven at 180 deg C for 10mins.
      • Meanwhile grease the pan with oil and little flour , tap off excess flour then add the prepared batter till 3/4th (or even 1/2 is ok) of the pan.
      • Garnish with walnuts and butterscotch (mix butterscotch with a tsp of maida and then add to avoid sinking to the bottom) on top and bake it for 35- 40mins or until the top turns golden brown.
      • Cool down for at least 30mins – 1 hour then cut into slices and enjoy Loaf Cake. Best as a tea time cake.

      Notes

      • I had some leftover butterscotch chips so wanted to use it. You can skip it if you don't have and proceed with just walnuts or I highly recommend adding caramel(1/8 cup)
      • Mix butterscotch chip with a tsp of maida and then add to avoid sinking to the bottom.
      • You can use this recipe for a basic sponge cake, the taste and texture is too good.
      • This time I didn't lay a butter paper just greased it with little oil and flour. The cake came out clean.

        luks very easy sharmilee and very tasty also..do u add the milk butter mixture to the egg sugar mixture when it is still hot or do we have to cool it down before mixing with the eggs???

        hello…
        what kind of sugar u have used like powdered sugar of granulated sugar.sometimes in India we don't get all types of sugar…so in that case can i powder the regular sugar and use it?will the amount of sugar differ if i add powdered sugar or will it be more….

        hello,
        i treied the cake..it was nice …but only the thing was that all the butterscoth chips settled down at the bottom of the loaf pan while baking.after baking i noticed that all the chips r at the bottom….?same thing happened with u?

        hi sharmi..perfectly done..cake looks so soft and moist..!!could you please explain about the addition of caramel..(can't easily fetch butterscotch in kerala)when should we add the caramel to the cake mix and do we add the caramel when its hot ?Thank you..

        @Anuradha: You can either use readymade caramel syrup eles make caramel and add it when it is still warm.Hope this helps!

        Hey Sharmi,

        I enjoy visiting ur blog. U've named it quite aptly. I live in Cincinnati,OH. I'm from CBE too. I was wondering if u r familiar with KRS bakes apple cake. It is round,kind of brown colored & has green yellow icing on top. I've been trying to hunt a recipe for it but to no avail. If u happen to know it could u please share it here.
