    Tender Coconut Pudding

    Tender Coconut Pudding is a mild, creamy dessert made by blending tender coconut, coconut water, agar agar, sugar and flavours. Tender Coconut Pudding is a special dessert for weekend & holiday lunch at home. Tender Coconut Pudding is natural, healthy and yummy too!

    Ingredients

    • 1 cup tender coconut pulp tightly packed
    • 1/2 cup tender coconut water
    • 1/2 cup condensed milk
    • 1 cup milk
    • 2 tbsp cane sugar

    For melting china grass:

    • 10 gms china grass
    • 1 cup water

    Instructions

    • To a mixer jar add tender coconut pulp, add tender coconut water to it.
    • Blend it, it should be slightly chunky not too smooth, set aside.
    • To another bowl add milk to it. Add condensed milk to it and mix well. Then add sugar(only if needed). Check for sweetness then add it,
    • Add tender coconut mixture and mix well. Add cardamom powder, give a quick mix.
    • Cut agar agar into small strips in case if its a big sheet like. Measure and take agar agar in a sauce pan, add water to it. Heat it up.
    • Keep stirring and cook in low flame. Cook until it is completely dissolved and the water is clear without any strips. Switch off.
    • Finally add china grass mixture and mix well. Be quick while mixing then add to the bowl where you want to set the pudding.
    • I added in a big glass container and a small serving cup. Refrigerate for 30 mins, it sets well in room temperature itself but for chillness I usually keep in fridge before serving.
    • Serve Tender Coconut Pudding chilled!
