Tawa Mushroom Recipe

Tawa Mushroom is very easy to make, the curry can be made in different ways but the main factor that differentiates this curry from others is that it is cooked entirely in tawa.Yes tawa you heard it right, so I can hear you asking so what difference does it make with the taste while cooking in tawa, I am going to leave you guessing…try this for yourself and am sure you will love it.

I used my iron tawa, you can use any dosa tawa too. I am trying to avoid nonstick pans for the past 6months and I am happy that I could survive without it even while making halwas and sweets.The posts that are coming hereafter with nonstick pans are the older drafted posts incase if anyone is wondering 😛

Kadai Mushroom Recipe

Tawa Mushroom Recipe – Ingredients

Preparation Time : 10 mins | Cooking Time : 25 mins | Serves : 2
Recipe Category: Sidedish | Recipe Cuisine: North Indian

Cleaned Mushroom – 1 cup chopped
Capsicum – 1/3 cup chopped
Big Onion – 1/4 cup chopped finely
Tomato – 1 medium sized
Ginger garlic paste – 1 tbsp
Red Chilli Powder – 1/2 tsp
Coriander powder – 1/2 tsp
Roasted Jeera Powder – 1/4 tsp
Freshly cracked pepper – 1/4 tsp
Garam masala powder – 1/4 tsp
Kasuri methi / Dried fenugreek leaves – 1/2 tsp
Coriander leaves – 2 tsp chopped finely
Oil – 1 tsp
Salt- to taste

To temper:

Oil – 2 tsp
Jeera – 1 tsp

Method:

  1. You need a tawa.I used my iron tawa which I use for rotis and parathas.Heat the tawa with oil, crackle jeera, then add ginger garlic paste along with onions.Fry for 2mins.

  2. When onion gets fried, puree a tomato in a mixer and add it.Mix well then add red chilli,coriander,jeera and garam masala powder and cook till raw smell of tomatoes go.

  3. Add required salt.Keep cooking till becomes thick.Then add mushrooms.

  4. Cook for around 3-5mins till mushrooms absorb the masalas and get cooked fully but should retain its crunch.

  5. Finally add capsicum, toss around and cook for 2mins.Add 1 tsp of oil if it sticks to the tawa.Add freshly cracked pepper,kasoori methi and chopped coriander leaves, give a quick mix and switch off.

Serve with rotis / parathas / veg pulao.

How to make Tawa Mushroom

My Notes:

  • The spice powders can be adjusted as per your liking.
  • It is a dry curry,if you want to make it more like gravy add more tomatoes.

    Looking so yummy and crunchy. Your photos speaks the texture very clearly. Good to know you are avoiding Non-stick vessels, yes their coating is causing lots of diseses and main route for different types of Cancer. Same for Tupperware plastic and other plastic vessels. Long time useage of this results in cancer, so many researches, food scientists, Ph.D in Nutrition students projects are showing the result. Even water bottle to kids school please use eversilver bottle – leakbroof so many available. Lunch boxes u are already in actin. Motivate others too not to use much plastic vessels.

    But why not non stick ? Bec when I asked my husband to buy me one non stick pan he refuses to buy too
    But can we use ceramic pan

    Thanks for the recipe, Sharmi.
    May I know where did you purchase the cast iron tawa from? I am also trying to get rid of non-stick tawa but its hard to find a good quality iron tawa.
    Also if you could,please do a post on how to season and maintain a cast iron tawa.
