Sweet corn sundal recipe a tasty and easy sundal that you can make for this navaratri.This corn sundal can be made for snack or even as sidedish.

When I planned to post navarathri sundal recipes, the first one that came to my mind was sweet corn sundal as corn is mittus favorite. I just made a simple sundal like we do other legumes.Check my notes for other variations.

Sweet corn recipe, try this sundal for navarathri.

Ingredients

  • 1 cup sweet corn kernels
  • 2 tbsp coconut grated

To temper:

  • 1/2 tsp mustard seeds
  • 1/2 tsp split urad dal
  • a small sprig curry leaves
  • 2 nos red chillies

Instructions

  • Rinse the kernels, transfer to pressure cooker along with salt and water(till immersing level).Pressure cook for 4-5 whistles or until soft.Heat oil in a pan - add mustard seeds and urad dal.
  • Let it splutter and wait till the dal turn golden then add curry leaves and red chillies.Now add cooked corn if there is little water add it along with the corn.
  • Toss it well.Cook covered for 2 mins for the moisture to leave.Now open and toss it again.If needed add salt.
  • Now add coconut and cook for 2 mins and switch off.

Notes

  • Do not add more water while cooking corn.Alternately you can steam cook it too.
  • You can even add a tsp of sundal podi or idli podi.

    @Meenal : Nono you can add it forectly. The pic shown in the steps is after I transferred it from the cooker to a bowl 🙂
