Quinoa biryani recipe an easy one pot dish you can make.I love trying all our indian dishes with quinoa and how can I miss biryani so tried it last week and we all absolutely loved it.

This is a no grind version of biryani I make for lazy days 😉 Do try this and let me know how you liked it! I added the vegetables I had in hand you can use any of your favorite vegetables.

Quinoa biryani recipe

Quinoa biryani recipe a flavourful one pot dish with vegetables.

Ingredients

  • Ingredients:
  • 1/2 cup quinoa
  • 3/4 cup mixed vegetables*
  • 1 tsp ginger garlic paste
  • 1 big onion sliced thin
  • 1 small tomato chopped roughly
  • 2 tbsp mint leaves
  • 2 tbsp coriander leaves
  • 1/2 tsp garam masala powder
  • 1/4 cup coconut milk
  • 1 and 3/4 cups water
  • salt to taste

To temper:

  • 1 tbsp oil
  • 2 tsp ghee
  • 1 half inch cinnamon stick
  • 1 no clove
  • 1 no cardamom
  • 1/2 bayleaf
  • 1 no green chilli slitted

* I used a mix of peas,carrot,beans and cauliflower.You can use any vegetable of your choice.

    Instructions

    • Soak quinoa for 10 mins, Rinse well atleast twice then drain and set aside.
    • Heat oil + ghee in a pan - add cinnamon,cloves,bayleaf,cardamom and green chillies.Give a quick saute.Then add onion saute saute till transparent.
    • Then add tomato,along with salt and garam masala powder saute till it becomes mushy.Then add mint leaves and coriander leaves.
    • Saute till it shrinks.Then add rinsed and drained vegetables.Give a quick saute.
    • Cook covered for 5mins or until the veggies are slightly soft.Open saute then add quinoa, give a quick mix.
    • Add coconut milk,water then bring to a boil in medium flame.
    • Cook covered for 10 mins in low flame(sim).Open then fluff it up. It may look moist and sticky after it cools down will become grain separated.
    • Serve hot with onion raita!

    Notes

    • If you prefer a more spicy version add 1/2 tsp red chilli powder while adding garam masala powder.
    • Coconut milk adds a great flavour to biryani so don't skip it.

        it depends on the recipe and pot used.For cooker you can use 1:2
