    Pasta cooked in rabri sauce is my recent experiment.I have already tried Pasta Payasam so knew this would also taste great.Some 2 months back , I bought a glass cookware named Visions from Currimbhoys,Chennai.I wanted to start with something sweet(as I have a sentiment of cooking something sweet to start with any new pan).

    So this is my take on a another sweet pasta dish – Pasta Rabri.This pasta rabri turned out to be fabulous. Mittu enjoyed it so much that she refused to share with anybody.Ok gugu is exception because its her habit to give atleast a small pinch of everything she eats when he is around but only a pinch.

    Pasta Rabri Recipe

    Pasta Rabri is a rich, creamy flavoured dessert made by cooking pasta with thickened mala milk and flavoured with saffron &dry fruits. Pasta rabri is a sure shot alternative to the regular kheer /payasam dessert and will be loved by the family.     Ingredients

    • 1 cup pasta
    • 2 and 1/2 cups milk
    • 1/4 cup sugar
    • 10 nos badam
    • 10 nos pista
    • 5 strands saffron
    • 2 cups water

    Instructions

    • Boil water, add pasta to it.
    • Cook until it becomes soft but not mushy. Drain water and set aside.
    • Take badam and pista in a mixer. Grind it to a coarse mixture, set aside.
    • Add milk to a pan.Boil milk. Add sugar and saffron. Simmer.
    • Stir in between to prevent burning at the bottom. Simmer till it reduces to almost half. Keep scrapping the sides.
    • Add nuts mixture. Simmer and cook till it becomes thick with malai.
    • Add cooked pasta and simmer for 5-7 more mins till it gets blended well. Once the rabri is well combined with the pasta and is creamy. Switch off. Cool down and refrigerate it. Enjoy Pasta Rabri!

    Notes

    • While cooking pasta don't cook till mushy as it has to further cook in rabri sauce also.
    • After adding the pasta to rabri make sure to cook in simmer for atleast 5mins only then it will blend well with the sauce.
    • I used full fat milk.
    • I used macroni pasta, you can use any small pasta variety.
