Mango Shrikhand Recipe – Amrakhand Recipe

Mango Shrikhand / Amrakhand is one the easiest mango desserts that can be prepared in no time.I made this amrakhand last mango season and clicked it…yes its been a year since these pics are waiting to make a appearance here 🙂 And finally here it is….

I am vacationing at my hometown Karaikudi so I will respond to your queries once I reach our nest…..:)

Mango Shrikhand Recipe

Shrikhand is a yogurt based dessert that can be any flavoured. And Amrakhand is “Aam” + “Shrikhand”. This is more or less a thick spoonable version of Mango Lassi / Mango Smoothie.

Mango Shrikhand Recipe – Ingredients

Serves : 2 Cooking & Preparation Time: 45 mins

Thick Curd(Yogurt) – 1.5 cups
Mango Pulp – 3/4 cup
Sugar – 3 tbsp
Saffron – 2 to 3 strands
Nuts – to garnish (I used almonds and pistachios)
Cardamom powder – 1/4 tsp (optional)

Method:

1.Hung the curd in a muslin cloth for 30mins or until all the water is drained completely.Then whisk the thick curd.
Mango Amrakhand Recipe - Step22.Blend the mangoes to a thick mango pulp without adding water. In a mixing bowl add mango pulp, curd,sugar,cardamom powder and mix well. Finally add in crushed saffron and quick mix.Garnish with chopped nuts while serving.

Chill it for an hr and serve chilled!

My Notes:
  • You can use chiroli nuts which is usually served with shrikhand/amrakhand.
  • Adjust sugar level according to the sweetness of the mangoes.
  • You can use any sweet mango with flesh.
  • You can use readymade mango pulp too but fresh mango puree tastes much better.
  • Stays well for a day or two.

        Yes you can use set curd too…infact it will be more perfect for hanging, will reduce the hanging time
