Idli sandwich recipe using leftover idlis and vegetable stuffing.I made this idli sandwich to share in Aval kitchen and it got published last month so thought to record it here too.

This idli sandwich is a very easy sandwich idea using leftover idlis, you can either serve it for breakfast or as a snack for kids am sure they will eat it without any complaints.

Idli sandwich recipe with vegetable stuffing.

Ingredients

  • 3 nos idlis
  • 1/4 cup chopped onion
  • 1 small potato boiled and mashed
  • 1 small carrot grated
  • 1/4 tsp garam masala powder
  • 1 tsp chopped coriander leaves
  • 1 tbsp butter
  • 1 tbsp tomato sauce
  • 3 nos onion slices
  • water as needed
  • salt to taste

To temper:

  • 2 tsp oil
  • 1/2 tsp jeera
  • 1 tsp ginger garlic paste

Instructions

  1. Heat oil in a kadai - add jeera let it splutter.Then add ginger garlic paste,onion and saute for 2mins until onions turns transparent.Add carrot.

  2. Saute for few mins then add mashed potato along with garam masala powder and salt.Cook for 2mins then sprinkle little water.

  3. Cook until the masalas are nicely blended.Finally garnish with coriander leaves and switch off.Now take the leftover idlis.

  4. Slice into 2 in the middle.Butter them well.

  5. Toast until golden.Spread tomato sauce on one slice of the idli(the bigger one as the base).

  6. Add generous spoon of the stuffing.Place an onion slice on it.Close with another slice,garnish with a piece of coriander leaf and serve.

Recipe Notes

  • I used leftover idlis.If you are using fresh idlis then refrigerate them for atleast 30mins before slicing.
  • You can use any vegetable stuffing of your choice.
