Kothu Parotta is a spicy, delicious dish made by shredding flatbreads / parotta & cooking them with masala gravy / curry. Egg Kothu Parotta also called Muttai Parotta is a famous street food delicacy that is craved by the families for its taste. Kothu Parotta uses leftover parotta, roti and gravies and variations include veg kothu, egg kothu or non-veg kothu parottas. How to make Kothu Parotta hygienically at home is explained in this post with step by step pictures.
If I can say the one thing that I can compromise on road side shops, it is with no doubt my favourite kothu parotta. I just love the taste in road side shops and it can noway be compared with the taste we get in restaurants. I tried to recreate the taste and it was close to it except for the addition of chalna they use.

Kothu Parotta
Ingredients
- 2 nos parotta
- 1 or 2 eggs
- 1 onion chopped finely
- 1 tomato chopped finely
- a pinch turmeric powder
- 1 teaspoon red chilli powder
- 1/2 teaspoon pepper powder
- 1 teaspoon ginger garlic paste
- 1 teaspoon coriander leaves chopped finely
Instructions
- Chop the parottas into small pieces. Keep aside.
- Heat oil, first temper fennel seeds then add add curry leaves, green chillies let it splutter. Then add ginger garlic paste, allow it to brown slightly.
- Now add onions, once it turns golden brown, add tomatoes when it turns mushy add turmeric, chilli and pepper powder. Add required salt and mix well.
- Then add the eggs mix it to scramble well, once it turns nicely fried and blended with the masalas add the chopped parotta and give a stir so that parotta is blended well with the egg & masalas.
- Garnish with coriander leaves and switch off. Kothu Parotta ready!
Notes
- You can skip eggs and add any veggie of your choice.
- Usually in road side shops for 1 plate of kothu parotta they use 2 shredded parottas and 2 eggs with the above said ingredients with salna added at the end which gives a mushy and soft texture.
- Also for the road style kothu parotta they add salna (the kurma that comes with normal parottas) which gives a very nice taste.
- Amma usually sauté onion and tomato well and then add it to the other other ingredients. You can try this too as tomatoes give a nice flavor.
- Squeeze lemon juice while serving if you like the flavor.
How to make egg kothu parotta

I usually make kothu parota with leftover sabzis 🙂 Instead of adding the various masala powders I dunk in any sabzi or dal and viola, it's done! I add a few eggs to make it more wholesome. It's a great way to use up leftover curry/vegetables. In fact, this is on the menu tonight!

@Fahad Khan : Parotta is with fully maida(white flour) but paratha uses wheat flour as the main ingredient. And chalna is a kurma type of siddish they give in road side shops here with parotta 🙂

Sharmilee..just before adding paratas, try adding our normal chicken gravy(along with the oil in the chicken gravy) to the recipe and then mix paratas …here after u will not compromise on the taste of ur kothu parotas made on road side…and we never add ginger garlic paste at all as we add our chicken gravy there…it tastes like road side kothu paratas…u and ur family members are welcome home and I will give this wonderful dish…
