Broken corn uttapam recipe a crispy uttapam made with cornmeal or corn rava.I had a pack of corn rava which I bought long back so trying different recipes using it.I first planned to try paniyaram using corn rava and it flopped so transformed the batter into these crispy corn uttapams. Believe me it tasted soo good and that justifies the post.

The uttapams are crispy at the edges with a soft center making it ideal for snack time or even for breakfast.

Broken corn uttapam recipe

Broken corn uttapam recipe made using corn rava.

Ingredients

  • 1 cup broken corn
  • 1/2 cup thick curd
  • 3/4 cup water (adjust according to the consistency)
  • 1/4 tsp soda
  • salt to taste

To temper:

  • 1 tsp oil + to toast
  • 1/2 tsp mustard seeds
  • 1/4 tsp split urad dal
  • 1 tbsp curry leaves finely chopped
  • 1/4 cup onion finely chopped

Instructions

  • My corn rava was a bit coarse so I pulsed it few times to get fine rava.Add it to a mixing bowl.
  • Add curd to it along with required water.
  • Mix well the batter should be thick but in pouring consistency.Heat oil in a pan - add the items listed under 'to temper', let it splutter.
  • Add onion and saute until it turns transparent.Add it and mix well.
  • Add required salt and baking soda.Look how airy the batter is.Heat a dosa tawa pour a laddle full of the batter on the tawa.Drizzle oil.
  • Cook covered then flip and cook until the edges start to turn golden.Repeat to finish the batter.
  • Serve hot with your favorite chutney.

Notes

  • Adding soda helps in making soft uttapams.
  • do not spread the batter just pour and let it spread by itself.
