I have been thinking to post this since long as I had been queried by friends and readers about the baking tins I use, where I get the ingredients, and my oven(which I will work on a seperate post). These are the common queries I get these days, so thought this post might be helpful as I know the hassles I went through personally while shopping for baking items and the situation was even more worse when I moved to CBE. Most of times the shopkeepers starred at me as if I was speaking in my own language 😉
I have tried my best to compile most items I’ve used in my baking, if you find anything missing, please drop a comment, will edit to add 🙂
The first and foremost essential item is the measuring cups and spoons. I use it for baking and even for everyday cooking most of the times. Though these may not be accurate for the gram measures, I have been using it since I started baking. If you are at Chennai try these at Santosh Super stores or any departmental stores(You will get the red ones). I got mine from Nilgiris here in Coimbatore. When I searched for these measuring cups I understood many shops had it even without realising the name of it so help yourself in the shops instead of asking them.
I also have a cup which has different measures for maida, sugar, rice flour etc in gms(the orange tumbler kind shown in the pic) – So these are the ones I am using / will be using till I find a proper kitchen scale. My cup and spoon measures are :
- 1 cup = 250 ml
- 1/2 cup = 125 ml
- 1/3 cup = 80 ml
- 1/4 cup = 60 ml
- 1 tbsp = 15 ml
- 1/2 tbsp = 7.5 ml
- 1 tsp = 5 ml
- 1/2 tsp = 2.5 ml
The next thing you will need will be a mixing bowl which is wide and easy to mix – I use a normal mixing basin which I use for cooking(am still searching for a proper mixing bowl esp for baking). Next is the whisk which you need for mixing cake batter.
Utensils & Others:
- Mixing bowl – Use a wide and deeper bowl
- Spatula and Whisk – I got in Nilgiris, you can find it in any supermarket
- Measuring cups and Spoons – Dept stores
- Baking/ Cookie tray – It came with my oven itself essential for cookies and pizzas
- Wire rack – This also came with my oven itself
- Baking Tins – To start with you can get a Bread loaf and a Round / Square tin
- Muffin pans
- Ramekins (the ones you see here holding nuts , chocochips etc) – Additional , you may require them for any puddings or lava cake. I got mine from Currimboys and Poppad Jammal
- Cookie Cutters – I havent had luck getting many shapes. If you dont get any fancy ones just use a small lid to cut into circles.
- Aluminium foil – Needed only for pizzas or for any grilling, you can get the roll in any dept store. You can use butter paper as an alternate as we get it in any stationary shop.

What I have is a bread loaf pan 9” X 3” which I have used in my bakes:
A cookie tray is a must for baking cookies, mine came with my OTG itself. I make bread pizza in this and the veg pizza using the collecting tray. Other than that, I have a round and a floral tin(nonstickware) which is the only nonstick baking tin I have. I havent used silicon wares but have heard good reviews from many of our blogger friends. I personally like the aluminium baking tins than the nonstick ones.
Cakes that I baked in floral and round pan:
For almost all cookies posted here I used the same tray
Muffins pans, you can again opt for siliconware or even nonstick. But I feel we use muffin liners most of the times so sticking is not a problem at all. Individual silicion muffin moulds are also available in the markets. Mine is aluminium as you can see it here.
Coming to the bundt pan…I searched for almost a year but coudnt find a right one. As most of them I saw were oversized, finally found this at Nilgiris.
I got all my baking pans from Santosh Super Stores(Annanagar, Chennai) except for the floral nonstickware and the bundt which I got from Nilgiris. I must admit not all Nilgiris branch has baking tins, try out in the main branch at your city.
I dont have many cookiecutters only 2-3 most of the times I use the round lid. I have got many things out of curiosity but sparsely use them(got them froma wholesale bakery retailer). Few among them are the icing cone and nozzles, which I havent used much. Even my tart pans are waiting for almost 2 yrs for me to experiment.

Baking Ingredients Needed (What to get and Where) :
- Maida (All Purpose Flour) – I use Nilgiris brand
- Granulated Sugar – Its again Nilgiris brand
- Icing Sugar – Bakers
- Demerera sugar – Bluebird
- Baking powder – Bakers
- Baking soda – Weikfield / Bakers
- Vanilla Essence(Black one) – Tiger brand from Nilgiris
- Coco Powder – Its cadbury
- Gelatin and China Grass – Bakers
- Condensed Milk – Amul / Nestle
- Yeast – Bakers or Bluebird
- Custard powder – Pillsbury
- Chocolate chips – From nuts & spices or nilgiris
- Butterscotch chips – From nuts & spices
- Cooking Chocolate – Marco / Morde from Nuts & Spices
- Mozzarella cheese – Amul
- Cheddar cheese – It can be either Amul or Britannia.
- Whip Cream powder – Bluebird
- Yogurt – Nilgiris / Amul
- Fresh Cream – Amul
- Butter – Its always homemade butter sometimes I use Nutralite
- Cooking Oil – Saffola
- Olive Oil – Extra virgin olive oil the brand I am using now is Figaro
- Milk – Its Aavin green if its full cream milk or blue which is low fat
- Dry Fruits and Nuts – I get it from a local dryfruits store
Self rising flour : I have seen it in Nuts and Spices but havent used it as I find normal All purpose flour itself working fine.

@Geethu , Kavitha : Mine is a Morphy Richards 18 ltr OTG. I dont have microwave oven so all my bakes are with the OTG and I havent found any trouble with it so far…More details coming up in the post 🙂 hopefully sooner

Poppat jamal has all the required baking utensils. as u said nilgiris in chennai all branches do not have the utensils. @ geethu @ kavitha Personally it is better to go for Microwave Convection mode so that u can use it for baking as well as cooking and reheated. I have whirlpool brand which i feel is good as i have it for more than 8 yrs
Yes as Latha says when you opt for both cooking and baking then go in for microwave + convection but if you consider only baking and grilling then I recommend OTG

So do we get brown sugar in India, If so in which shop. I am asking abt the brown sugar which we use especially in cookies in US.
I havent used brown sugar but guess you check it out at Nuts and Spices outlets…I personally havent got it but have a vague remembrance seeing it there….

This is probably one of the most helpful posts for baking that I've seen. I've been "baking" since I was little, but now that I'm on my own, it's harder to know what to keep stocked and what I need to buy for a new kitchen. Also, I'm jealous that you have Cadbury coco powder! I've never seen it in a grocery store before.

@Salini : Its hard without a measuring kitchen scale to measure homemade butter. Else you will have to get packs of butter in gms.

@Nithya: I dont use any beaters, I use my whipper/blender option which came with my chopper for beating eggs. But heard philips brand is good , my cousin has it and she said it gives good results.

I also need to know if i can use amul or any other cooking butter? And also need to know if butter paper has to be used everytime we bake a cake so tat it does nt stick? i am worried abt the cake sticking in the molds. Plz advice.
@Anusha : Thats great to know…I always use homemade butter..you can get nutralite which is low fat and good too…Reg laying butter paper please check my baking essentials part 2 for the tips….there I've given method for easy unmoulding even without butter paper.

@Swati : I dont think the tin matters for the raising, it depends on the raising agent and also the batter consistency…

Hi Sharmi, very very nice post. Really informative. I have few doubts though: How do I prepare whip cream frm Amul cream, generally its very watery and not that thick. Whenever I try to use it for frosting, I end up getting very watery frosting. Secondly for cupcakes can we set the cupcake liners in a baking tray rather than getting a seperate muffin tray for it.
@Rashmi : 1. Reg amul cream I havent used it personally for frosting just have used it once for cheese cake….Guess when you whip using a blender until fluffy it will set well…2. You can but when you pour the batter the cupcake liners will not stand stiff if it is that thick then you can proceed.

hiii…Sharmi!!! this is a superb site of urs….can u please tell me how to prevent the cake from breaking and having a peak while baking…,.My OTG is of Morphy Richards 24 RSS …can u please tell me the ideal time and temperature for preheating the oven (i make only eggless cakes) and also the time and temperature while baking.. mine gets baked but also forms a peak and gets burnt from below…am a little messed up with the temperature settings for baking and preheating….Kindly help…

I usually follow the orginal recipes baking temperature and timing alone +/- depending on the recipe….Does it happen for all cakes? Keep in the middle rack and use butter paper before pouring the batter…this might help!Other than that check my baking tips post also.

I have read people mention trigger sieve, normally pan sieve. heard abt colanders also being used for sifting flour.

Can we use aluminium foils instead of butter sheet? If then do we have to grease aluminium foil? I searched for butter sheet but couldn't get one. So I searched for alternatives in the net and happened to read it.have u tested it?
Yes you can use silver foil and no need to grease them – this is for cookies. Not sure if silver foil will work for cakes
Got the butter sheet but didn't get the paper liner. Hunting for the ing. nd basic tools is really challenging. What is the alternative 4 muffin paper?
May be you can grease the muffin pan and directly spoon the batter into it.Or you can use butter paper but you the muffins may not hold its shape

Yes you will need both baking tray and mould for baking muffins.
Else you can get silicon moulds / mould tray and bake it without the liners

I dont do icing mostly use readymade whipped cream powder so not sure of it….I buy liquid colors in a wholesale shop here in Coimbatore

It might be too late a reply but in Chennai you can get all your baking ingredients and accessories from Wall Tax road (Take the left immediately next to Chennai central Railway Station). There are couple of essence marts on that road. I usually go to Viveka essence mart. Its a one stop shop.

You should microwave convection mode in your oven to bake cakes,cookies and pizzas.

But trust me I have used only OTG and have no idea of microwave so it will not be justified for me to say which is better.But as far as I know OTG is best for baking
@preethi am using LG micro oven only…its as good as an OTG..if u r going to bake professionally that is as a business then go for OTG or if it is fr simple home purpose then go for micro oven…this way u can also cook in oven which is so easy and takes less time..

I just bought a Ovastar 12 Ltr OTG as it was at a throwaway price, but found it to be very small. Can you guide if I should keep it, if it can be used in anyway due to its size or return it and purchase a higher capacity? I am not into baking but want to try it looking at your posts.

It is better to go in for a medium size atleast as I have heard small size easily burns cakes and cookies….

If you want to measure in grams you need a kitchen scale…Either go by grams or by cup measures, dont confuse both

im a beginner to baking. im using Morphy Richard 25CG oven. at what temperature shall i bake the cakes? because i set it for 180C the top layer of the cake getting brown and the bottom is not cooked properly. whether i have to reduce the temperature or cover the cake with silver foil while initial baking?
Each recipe calls for different temperature.Keep in middle rack while baking, if it turns towards the end of the baking time then its ok but if starts burning in the middle itself then there should be some problem.So please check the instruction manual.
