We always end up using leftover idlis in idli upma or idli podi toast. Sometimes I make idlis in bulk to use the leftover for next days breakfast as its quick to put it together. I love any upma variety bread upma or even wheat rava upma. It is really interesting to see how a simple boring idli turns into this colorful upma...ahh guess I've started admiring food more only after I started photographing it :) Now lets learn how to make idli upma.


Idli Upma Recipe - IngredientsServes: 1Cooking Time: 15 mins
Leftover Idli - 4
Big Onion - 1 medium sized chopped finely
Turmeric powder - 1/4 tsp
Coriander leaves - 1/2 tbsp chopped
Salt - to taste
To temper:
Oil - 1.5 tsp
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Curry leaves - few
Hing - a small pinch
Green Chillies -1 long variety chopped roughly

Method:
1.Crumble the leftover idli with your fingers and make it ready, set aside. Heat oil in a kadai add mustard seeds and urad dal let it splutter.

2.Then add curry leaves, hing fry for a minute then add green chillies, onion and saute till it turns slightly browned.Then add turmeric powder, required salt and give a stir.

3.Then add crumbled idli and mix well to combine.Then add coriander leaves and switch off, give a quick stir.

Serve it hot or warm. It tastes good by itself but if you prefer you can have it with coconut chutney.

My Notes:
- Instead of green chillies, you can even add red chillies
- You can add a tsp of coconut with onions which gives a nice flavour.
- Add a tsp of idli podi along with the idlis to get a different flavour.
