Onion Mint Sandwich Recipe | Easy Sandwich Recipes

I was happily napping one fine afternoon (which is rare these days with a 5.5months old hyperactive baby :)), my tummy started kicking me. Opened the fridge no veggies except for 1 not so fresh beetroot and half a packet of bread. I remembered the left over puthina chutney which I had for idly that morning, so made this quick sandwich.

So what are u waiting veggies in stock try this sandwich with the ingredients that are sure to be in your pantry!

Onion Mint Sandwich Recipe

Bread slices - 4 ( I usually use wheat bread)
Urad dhal - 2 tsp
Mint (Pudhina) leaves - 3 tbsp
Finely chopped onion - 1
Salt to taste
Turmeric powder
Chilli powder - a pinch
Sambhar powder - 2 tsp (optional)
Ghee - to toast


1. In 1 tsp of oil, add urad dhal, let it temper then add mint leaves and saute well till the leaves are crushed, add few drops of water and grind it to a fine paste. keep it aside.

[Though this is not the original recipe for pudhina chutney, this goes well with sandwiches]

2. Drizzle oil, add onion, turmeric powder, chilli powder, sambhar powder and saute till the onions turn light brown.

3. Take  2 bread slices and apply the mint paste on both the slices on one side.

4. Place the onion filling in between the 2 slices and press it.

5. Toast it with ghee in a toaster or in dosa pan.

You can substitute the mint leaves with corriander leaves.....It tastes gud too! 'Just not any other dish'.

Masala Kuzhi Paniyaram

I've been eyeing this masala kuzhipaniyarams since I saw it in Nags space, made it for breakfast last weekend and it turned out very tasty. I didnt know that the paniyarams with dosa batter wud taste soo gud!
Masala Kuzhi Paniyaram
I replaced coconut with carrot and sauted all the ingredients before I added them to the batter.

Mustard seeds - 2tsp
Turmeric powder - 1tsp
Finely chopped Onion - 1
Finely chopped Green chillies - 1
Red chilli powder - 1 pinch
Hing - a pinch
Grated Carrot - 1 big size
Curry leaves - few
Salt - to taste
Masala Kuzhi Paniyaram
1.Drizzle oil, allow mustard seeds to splutter.

2.Add onions, chillies, carrot and curry leaves and saute for 5mins till onions turn light brown.

3.Add turmeric powder, hing, chilli powder and salt. Now add above to the dosa batter and mix well.

4.Heat the paniyaram pan add a drop of oil in each hole, fill in each hole with the batter, but not more than 3/4th full as the paniyarams will raise a little . Let it cook on the other side until its crisp.

5.Turn over and cook the other side. Serve hot with chutney!

The spices were well blended that it needed no sidedish but we had it with leftover coriander chutney...:)

Curd Semiya is best suited for ending guest dinners and parties, a great alternative to curd rice.Curd semiya can have many variations with carrots, pomegranates etc but I love it this way with a simple tadka. I will post semiya bagala bath recipe soon.Few weeks back , I made semiya biryani and curd semiya for lunch and everyone loved the combo so much, and I ate it heartily too :) I was in a hurry that day to click semiya biryani, so couldnt reclick this thayir semiya, so I made it again today and clicked it.

Curd Semiya  

Thayir Semiya Recipe - Ingredients

Preparation Time : 10 mins | Cooking Time : 15 mins | Serves : 2

Vermicelli / Semiya - 1 cup
Chilled curd - 3/4 cup
Milk - 1/4 cup
Cashews - 4 whole broken
Ghee - 1/2 tsp
Coriander Leaves - to garnish
Water - 2 cups
Salt to taste

To temper:

Oil - 2 tsp
Mustard seeds - 1 tsp
Urad Dal - 1/2 tsp
Green chillies - 1 finely chopped
Curry Leaves - a small sprig
Ginger - 1/2 tsp finely chopped


  1. Dry roast vermicelli till slightly golden.Set aside.Get ready with other ingredients.How to make thayir semiya - Step1
  2. Boil water. then add roasted vermicelli.Let it cook for few mins.

  3. Cook until semiya becomes soft.Drain water and set aside to cool down completely.Fluff it with a fork when it is still warm else it will become very sticky.Heat ghee in a tadka pan , fry cashews till golden brown,Set aside.

  4. Heat oil in the same pan and add the ingredients listed under 'to temper', let it splutter, switch off.In a wide mixing take cooked semiya, add curd,milk,tadka and fried cashews along with required salt.Give a quick mix.Garnish with coriander leaves.

My Notes:

  • If it gets too dry, while serving add little milk / curd to loosen it up.
  • I add milk to avoid sourness but thats purely optional.If you are making and serving it atonce then add only curd.
  • Curd Semiya thickens with time and semiya tends to absorb the curd.So reserve little curd for serving time.
  • You can even garnish with grated carrots.

Aval Upma / Poha Upma is one of the easiest and quick snack that can be made for snack time.You can add vegetables and make it wholesome for breakfast too.

Aval Upma - Ingredients

Preparation Time : 15 mins | Cooking Time : 30 mins | Serves : 2
Recipe Category: Side dish | Recipe Cuisine: South Indian

Poha/Aval (thick or thin) - 1 cup
Onion - 1
Turmeric powder - 1/4 tsp
Salt - to taste

To temper:

Mustard seeds - 3/4 tsp
Urad Dal - 1/2 tsp
Curry leaves - few
Green chillies - 1 finely chopped
Hing - a generous pinch


  1. Soak poha in water for 5mins (I used thin if its thick it will take some more time).In a kadai : Drizzle oil, add mustard seeds,urad dal green chillies and curry leaves let it then add onions, curry leaves, green chillies. Then add onion, turmeric powder and hing fry till onions turn golden brown.

  2. Add the poha,required salt and mix well. Keep covered for 2-3mins until it becomes fluffy.Poha upma is ready to be served!

Serve with any parathas or variety rice.

My Notes:

  • You can even add 1 tsp of chana dal while tempering.
  • You can add boiled vegetables , tomatoes etc to this upma.Add roasted peanuts for extra crunch.
  • Soaking time of poha depends on the variety of poha if its thin it takes very less time, if its thick then it needs a little extra time.

Dates Cornflakes Smoothie | Healthy Breakfast Smoothies

I often find myself getting confused with a smoothie and a milk shake so tried googling today. Some facts about smoothie from wikipedia :

A smoothie is a blended, chilled, sweet beverage made from fresh fruit or vegetables.In addition to fruit, many smoothies include crushed ice, frozen/.dry fruit, honey or frozen yogurt. They have a milkshake-like consistency but much more thicker. Unlike milkshakes, they usually don't contain ice cream, but contain milk.

A smoothie is very refreshing for a morning breakfast. This dates smoothie is not only filling its healthy too! The flavour when cornflakes,dates and honey are blended tastes so gud!

Dates Cornflakes Smoothie Recipe - Ingredients
  • Milk - 1 cup
  • Dates - 4
  • Cornflakes - 2 tbsp
  • Honey - 1 tsp (optional)
  • Crushed ice - from a cube

Dates Cornflakes Smoothie

1.Blend cornflakes, dates, milk, ice and honey to form a smooth mixture. [No sugar needed]
2.Garnish with crushed cornflakes and Serve chilled!

Thick creamy yummy breakfast smoothie ready!
